Shrimp a la Mexican!

I made dinner a couple days ago and it was so delicious I have to tell share the recipe. Its super easy I promise. Prep time is 10 min. and cook time is less than 20 min. So if you’re like me and like a fast and yummy dinner. This 30min meal will be for you. Give it a try.
Ingredients
Serves about 4
1lb of pre cooked medium shrimp
1 large tomato
1 large union
1 jalapeno
Butter/margarine
Salt
Pepper
1 cup of water
Ok first thing you do is chop up your tomato, union and jalapeno. I take the seeds of the jalapeno because I don’t like it to spicy and chop it smaller than I would the tomato and union.

In a medium sauce pan over a low heat I put about 4 table spoons of butter.Let that melt and add the union and jalapeno. Let those soften a little and then add the tomato, because the tomato cooks fast I add it later.

Once you see the tomato get soft add pepper and salt to your tasting.

Here comes the good part. Rinse the pre cooked medium shrimp and add it to the pot. Mix it all together and add 1 cup of water Cover it and let it simmer.

Shrimp cooks fast so make sure you don’t over cook it or the shrimp will harden and will not be tasty.

Wasn’t it easy peasy. I usually buy French bread and dip it in my plate. Its so buttery it makes me mouth water just thinking about it.

The last shrimp LOL

The twins where so excited to help make the bags for their classmates. They ripped the first two bags by over stuffing them with goodies.

Materials

Printer
Cardstock
Photoshop Elements 8.0
Trick or Treat freebie kit I picked up over at Creative Mundi
Sandwich zip lock bags
Candies, chocolate eye balls and other sweet treats
Some left over Easter grass I had from the baskets I made this yr.
Small spooky novelty toys
Staple and staples
Scissors or craft knife

I had a little working line going with the twins. I started by opening the zip lock bags put the bigger candy and some grass in for decoration.
Giovanni was second he put in the SpongeBob crabby patty gummy candy and two eye ball chocolates

Gincarlo was the last one to fill the bags.He put in the toys and pixie sticks. He calls them yummy sugar sticks. He says the bags need lots of sugar sticks.

After Gincarlo it’s back to mommy to seal the bags and staple the topper to the top of the bags. (Size of the topper is 6.9”x 5”) and the end result was this.
